Wood is an excellent material for cutting boards. It’s gentle on knives, keeping them sharper for longer. Studies have shown that wood is more sanitary than plastic, with bacteria having a lower survival rate on wooden surfaces. And, of course, wooden cutting boards add a touch of elegance to any kitchen. Proper care, however, is essential to maintain their beauty and functionality.
Since wood is porous, unfinished cutting boards absorb food juices, colors, and smells. A simple seasoning process can prevent this and restore the vibrancy of even the most neglected boards.
Seasoning, or finishing, a board involves applying food-safe mineral oil or wood cleaner and letting it air dry. If your board has been neglected for a while, a few extra steps can bring it back to life.
Start by sanding the board. 180-grit sandpaper is effective for removing deeper cuts and scratches, while 320-grit sandpaper provides a smooth finish. Wrap the sandpaper around a small block for easier handling.

Always sand with the grain of the wood to avoid damaging the board. Periodically wipe away the wood dust with your hand or a brush. After a few minutes with the coarser grit, switch to the finer sandpaper for a polished surface.

Once sanded, wipe the board with a damp sponge to remove all remaining sawdust. Let it air dry for at least an hour, or longer if necessary.
After the board is completely dry, it’s time to apply the oil. Choose a food-safe mineral oil or beeswax product. A combination of mineral oil and beeswax is an excellent option.

Apply the oil generously. A dry board will absorb a significant amount of oil. Allow the board to dry for several hours, or preferably overnight, before using it.

For extra protection, repeat the oiling process several times. If you still notice dry spots after the initial treatment, additional applications will ensure complete saturation. With proper care and regular seasoning, your wooden cutting boards will look and feel like new for years to come.
